What Kind Of Chocolate To Use For Baking
For anything where the chocolate needs to be melted, like chocolate ganache, or fudgy brownies, you want to make sure you are using REAL chocolate, not chocolate chips or a chocolate candy bar. Look for the cocoa percentage on the packaging.
The exception is when you are actively adding chocolate chips to something - like a chocolate chip cookie. Chocolate chips have additives to prevent them from melting the same way as real chocolate does.
Typically, I like to use dark chocolate for desserts, like my chocolate mousse recipe - as it gives a deeper chocolate flavor in the end dessert - but you can choose whatever kind of chocolate suits your palate best.
