My Baking Philosophy
I truly believe that baking is for everyone.
Baking is deeply personal to me - it's my love language. Taking the time to measure, stir, fold, and wait is an act of care - so the term 'baked with love' is an accurate statement.
I also believe that being good at baking isn't about talent or perfection - it's about understanding the science. I always say cooking is an art, and baking is a science. Most people who think they can't bake simply need a clear recipe that explains the why, not just the how. That's why my recipes go so in-depth; I want you to understand exactly what's happening inside the bowl so you can get consistent results every time.
And finally, I'm a big believer in keeping things real - real ingredients, real flavor, and real homemade joy. No box mixes, shortcuts, or artificial flavors. My goal is to make bakery-quality desserts achievable and accessible, using ingredients you can find at the grocery store. Because homemade will always taste better.

My Story
I started my first baking business at sixteen, in my family kitchen in Scotland. I had no idea that over the next decade it would grow into a full bakery operation - two storefronts, a commercial kitchen, and a team of talented bakers I had the joy of training and leading.
After ten unforgettable years, I felt ready for a new adventure. So I packed up my piping bags, a single suitcase, and my fluffy white cat, Jasper, and moved across the world to Canada.
Bonni Bakery began as a way for me to stay in touch with my passion and to share my old, tried-and-true recipes that had become staples in the bakery, but then I started getting wonderful messages from people telling me how I had given them more confidence in the kitchen, and I realised this was something more.

When I had my bakery, the thing that got me out of bed in the morning was that wonderful feeling of watching people take a bite of something that I had created and seeing how much joy it brought to them.
I sometimes miss the hustle of bakery life, but what I love about running a baking blog is that now I get to bring that same joy to millions of homes all over the world. Knowing that these recipes are being baked, shared, and loved by families worldwide is a feeling I can't even describe - so thank you for making this dream possible!
Now living back in Scotland, with my Canadian husband and our two gorgeous girls, Aurora and Juniper, I share new dessert recipes every week - creations made for real kitchens, real families, and real moments of sweetness.

Experience
I have over 16 years of professional baking experience, 10 years of which were spent running my own bakery and training a large team. I also taught cake decorating classes to the public.
Expertise
I have a broad range of dessert recipes on this site, but my real specialty lies in breaking down impressive desserts that might seem intimidating (Like French Opera Cake) into easy-to-follow, well-explained recipes that anyone can master at home.
Education
While I was growing my bakery, I also completed a Bachelor's degree in business. It taught me to look at this website through the reader's eyes and ask 'How can I make this experience better for you?'. This mindset helps me to keep improving Bonni Bakery so it can be as clear, helpful, and enjoyable for you as possible.
My Favorite Recipes
People always ask me what my favorite dessert recipes are. These are my favorite desserts that I make time and time again:

My favorite dessert
Chocolate Mousse
This has always been my favorite dessert, but I never order it because it is rarely done well.
My chocolate mousse recipe is silky smooth, thick, and intensely chocolatey. It never disappoints.

My best quick recipe
Crinkle Cookies
This is my go-to recipe when I need to quickly whip up something to give as a gift or for some last-minute guests.

My proudest invention
Pistachio Dacquoise
I was inspired to make a version of dacquoise cake using my favorite nuts - pistachios. This dessert did not exist before, and I honestly think it is probably the best thing I have ever made!
It gets requested by my family every single Christmas.

What I always have at home
Chocolate Chip Cookies
I got a bit obsessed with perfecting this chocolate chip cookie recipe and went through 36 iterations of it before deciding it was truly great.
I keep a constant stock of these ready-to-bake in my freezer so we can have cookies whenever we want them.
