These super cute carrot patch cupcakes are a fun treat to make for Easter dessert. Chocolate cupcakes with oreo 'dirt' and a piped cheesecake carrot in the middle!
Easter is such a great time for creative desserts, there are so many fun things you can create. These carrot patch cupcakes are no exception! They are adorable but also absolutely delicious, using my classic Chocolate Cupcakes as a base, with a creamy cheesecake carrot piped into the middle.
Ingredients
The base of these cupcakes is my classic chocolate cupcake recipe, but you can use store-bought cupcakes if you want to skip that step!
- Chocolate Cupcakes - I used this chocolate cupcakes recipe for my carrot patch cupcakes, but if you don't want to bake them from scratch you can also use store-bought cupcakes.
- Cream Cheese - Full-fat cream cheese such as Philadelphia
- Powdered Sugar - also known as icing sugar or confectioners sugar.
- Vanilla - You can use vanilla extract or vanilla bean paste
- Orange Food Color - I recommend using gel food coloring as it will have a much stronger color
- Oreos - To make the 'dirt' for our carrots to sprout out of
- Fresh Mint Leaves - You could use any edible leaves you like but I think mind gives the best flavor.

Instructions
- Make the cupcakes according to the recipe. My chocolate cupcake recipe is super quick and easy. Or if you are using store-bought cupcakes then you can skip this step!
- Use a cupcake corer to core out the center of the cupcake. You can eat or throw away the middle bit as we won't be placing it back on.
- Spread a thin layer of chocolate frosting over the top of the cupcakes. My chocolate cupcake recipe uses super quick 3 ingredient chocolate buttercream, but you can use any chocolate frosting you like. Use the end of a spoon to scoop out the frosting over the hole in the cupcake.
- Crush up your Oreos in a food processor or bash them in a Ziplock bag with a rolling pin. There is no need to remove the white part of the Oreos.
- Dip the frosted cupcakes in the crushed Oreos to coat completely.
- Beat the room-temperature cream cheese, powdered sugar, and vanilla in a bowl until smooth.
- Add a little of the orange food coloring to the cheesecake mixture and mix until totally incorporated and the mixture is 'carrot orange'. Put the cheesecake into a piping bag or Ziplock bag and snip off the end to make a small hole.
- Place the piping bag into the bottom of the cupcake center and squeeze gently while pulling upward, once the bag reaches the top of the cupcake, start moving around in a circular motion to form a carrot shape (see video below).
- Finish off the 'carrot' with a sprig of fresh mint.

Storage
As the carrot is made of cream cheese, the cupcakes will need to be stored in the fridge. Make sure to place them in an airtight container to avoid them drying out. They will be good like this for 3 days.
Top tip
Share something here that you think is key to making this recipe well, such as: Don't overcook the burgers! Sear the outside and cook to a minimum internal temperature, but they should still be juicy for best results.

- Put a thin layer of chocolate frosting on top of each cupcake, then use the end of a teaspoon to scoop out the bit covering the hole.1 cup Chocolate Frosting
- Crush the Oreos - either in a food processor or in a Ziploc bag with a rolling pin. There is no need to remove the white middle of the Oreo.6 Oreos
- Dip the frosted cupcakes in the crushed Oreos to cover the top completely.
- Beat the room-temperature cream cheese, powdered sugar and vanilla in a bowl until smooth.8 oz Cream Cheese, 2 tablespoon Powdered Sugar, 1 teaspoon Vanilla Extract
- Add a little orange food coloring and mix until it is 'carrot orange'Orange Food Coloring
- Place the orange cheesecake in a piping bag or a Ziploc bag with the corner snipped off. Place the piping bag into the bottom of the cupcake middle and squeeze gently while pulling upward, once the bag reaches the top of the cupcake, start moving around in a circular motion to form a carrot shape (see video).
