Ingredients
200g(1cup)Granulated Sugar, 200g
110g(½cup)Light Brown Sugar, 110g
2(2Large)Eggs
2(2)Bananas, Medium, ripe
360g(3cups)All-purpose Flour, 360g
4teaspoon(4teaspoon)Baking Powder
1teaspoon(1teaspoon)Salt
100g(½cup)Vegetable Oil, 100g
360g(1 ½cups)Whole Milk, 360g
1teaspoon(1teaspoon)Vanilla Extract
420g(1 ½cups)Nutella, 420g
Instructions
Preheat oven to 350°F / 180°C and line a muffin tray with muffin liners
Whisk together the eggs and sugars just until combined.
Mash up the ripe bananas with a fork and mix them in with the eggs and sugar.
Add the oil, milk, vanilla and and whisk everything together.
Sieve together the flour, baking powder and salt and add to the bowl.
Half fill the muffin cases with batter, then spoon a teaspoon of nutella on top of the batter.
Fill the rest of the muffin case with batter, enclosing the nutella inside. For extra-large 'mushroom' shaped muffins, fill the batter all the way to the top of the liners.
Put another small dollop of nutella on top of the muffins and swirl into the batter with a toothpick.
Bake for 20 minutes or until golden brown and a toothpick comes out clean (make sure you avoid the nutella when testing).
Let cool in the muffin tray before attempting to move the muffins, as they will be fragile and may break if moved while hot.
