Millionaire's  Shortbread

Scottish shortbread with gooey caramel filling and dark chocolate topping.

Beat the softened butter and sugar together, then mix in the flour and bring together into a dough.

Step 1

Press into a square pan and prick with a fork. Bake until golden at the edges.

Step 2

Heat the sugar, butter, and syrup over medium heat until the sugar dissolves fully.

Step 3

Stir in the condensed milk and salt, and boil until thickened.

Step 4

Pour the caramel over the shortbread base and chill for 1-2 hours.

Step 5

Melt the chocolate and pour it on top of the chilled caramel. Chill for a further hour before slicing.
