Blueberry Crumble Muffins

Soft and crumbly muffins bursting with blueberries, stuffed with cheesecake and topped with a crunchy streusel topping.

You'll Need: Flour Eggs Sugar Sour Cream Veg Oil Vanilla Butter Blueberries

Step 1: Make crumble by mixing melted butter, sugar, and flour.  Set aside.

Step 2: Whisk together eggs and sugar.

Step 3: Add sour cream, oil and vanilla and mix together.

Step 4:  Add flour, baking powder and salt and mix until lump free.

Step 5:  Fold in the blueberries and scoop into muffin cases.

Step 6:  If you want to do a cheesecake filling, add in cream cheese and icing sugar now.

Step 7:  Top with streusel topping and bake at 350°F for 18 minutes.
