Berry Chantilly Cake

You'll Need: Flour Sugar Butter Eggs Vegetable Oil Milk Vanilla Almond Extract Powdered Sugar Heavy Cream Mascarpone Fresh Berries

Step 1: Make the vanilla cake using the reverse creaming method for super soft cake layers.

Step 2: Boil the raspberries in sugar and water to make raspberry simple syrup.

Step 3: Whip the heavy cream to firm peaks, then fold into the mascarpone, powdered sugar and vanilla.

Step 4: Soak the first cake layer generously with raspberry syrup.

Step 5:  Spread a thin layer of chantilly cream on top, then cover with a layer of sliced berries.

Step 6:  Smooth more chantilly cream on top of the berries, then repeat with the next cake layer.

Step 6:  Soak the final cake layer in syrup then cover the whole cake in chantilly cream. Top with fresh berries.
