Light, crispy and lacy oatmeal cookies. Totally addictive and easy to make in just 15 minutes!
Step 1: Whip sugar, egg and vanilla together until frothy (20 seconds).
Step 2: Mix in the oats, flour and salt to form a soft dough.
Step 3: Spoon heaped teaspoons of dough onto a cookie sheet.
Step 4: Bake at 320°F for 12 minutes or until golden brown on edges.
Step 5: Allow to cool on the tray for 10 minutes before removing.
Step 6: Transfer to a cooling rack or eat immediately.
