Strawberry Cupcakes

Fluffy strawberry cupcakes topped with strawberry buttercream and filled with homemade strawberry puree.

You'll Need: Butter Sugar Flour Eggs Strawberries Vanilla Milk Oil Condensed Milk

Step 1: Make the strawberry coulis by boiling, then blending the strawberries and sugar..

Step 2: Put dry ingredients in a mixer bowl and add butter one chunk at a time.

Step 3: Add strawberry puree and oil and beat for 2 minutes.

Step 4: Mix in the eggs, milk and vanilla.

Step 5:  Divide into cupcake liners and bake for 18 minutes at 335°F.

Step 6:  Core out the middle and fill with 1 teaspoon of strawberry coulis.

Step 7:  Frost with strawberry Russian buttercream and top with a fresh strawberry.
