Shortbread Cookies

Traditional Scottish shortbread recipe for buttery, crumbly, melt-in-the-mouth cookies.

Lightly beat the softened butter and sugar, just until combined.

Step 1

Sift in the flour and use your hands to bring it together into a smooth dough.

Step 2

Roll out the dough on a floured surface until it reaches a ¼ inch-½ inch thickness.

Step 3

Cut out cookie shapes and place them on a baking sheet. Sprinkle with sugar and chill for at least 1 hour.

Step 4

Bake for 20-25 minutes depending on thickness, until the edges start to turn golden brown.

Step 5

Let the cookies firm up on the baking sheet for 10 minutes, then transfer to a wire rack to cool.
