Raspberry Muffins

Fluffy raspberry muffins with bursts of tart raspberry and a sweet crunchy crumb topping.

You'll Need: Butter Sugar Flour Vegetable Oil Sour Cream Eggs Raspberries Vanilla

Step 1: Whisk together the eggs and sugar until thick and pale.

Step 2:  Add the sour cream, vegetable oil and vanilla, whisk together.

Step 3: Sift in the dry ingredients and mix until there are no lumps

Step 4:  Add the raspberries and fold in gently.

Step 5:  Scoop into muffin liners and sprinkle with crumb topping.

Step 6:  Bake at 425°F for 5 minutes, then turn the oven down to 350°F for a further 13-15 minutes.
