You'll Need: Heavy Cream Egg Yolks Pumpkin Puree Sugar Vanilla Cinnamon Ginger Salt

Step 1: If you want to serve in mini pumpkins, start by hollowing out the pumpkins.

Step 2: Mix together egg yolks and sugar in a bowl.

Step 3: Heat the cream and vanilla in a saucepan on low heat.

Step 4:  Once the cream starts to get warm, drizzle it slowly into the egg yolks, while whisking.

Step 5:  Pour the whole mixture back into the saucepan and add pumpkin and spices.

Step 6:  Heat until the custard starts to simmer, then pour into the pumpkins (or ramekins).

Step 7:  Bake at 300°F for 25 minutes.

Step 8:  Sprinkle a thin layer of sugar and torch it until caramelized.
