Pistachio Cupcakes

Fluffy pistachio sponge made from scratch with real pistachios, topped with pistachio Italian meringue buttercream.  These cupcakes are bursting with pistachio flavor! Let's make them!

You'll Need: Butter Sugar Flour Eggs Sour Cream Milk Pistachio Paste Pistachios Almond Extract

Start by creaming butter and sugar together.

Add the egg and sour cream and mix in.

Fold in the flour and milk and mix until there are no lumps.

Add the pistachio paste, vanilla and almond extract and stir.

Chop the pistachios and fold them into the cupcake batter.

Scoop batter into cupcake liners and bake at 350°F for 17 minutes

Decorate with your favourite frosting - I used Pistachio Italian Meringue Buttercream (get recipe below)
