You'll Need: Eggs Sugar Cornstarch Whipping Cream White Wine Vinegar Pumpkin Puree Butter Orange Juice Cinnamon Ginger Nutmeg Pecans Chocolate Shavings

Step 1: Whip the egg whites and slowly add the sugar. Then vinegar and cornstarch.

Step 2: Whip until stiff peaks are thick and glossy.

Step 3: Pour meringue onto a lined baking sheet and smooth into a circle shape.

Step 4:  Bake for 1 hour 15 mins and then leave in the oven until completely cooled.

Step 5:  Prepare pumpkin curd according to recipe below.

Step 6:  Pour curd onto cooled pavlova, decorate with cream, pecans and chocolate shavings.
