Millionaire's Cheesecake

No-bake cheesecake on a shortbread base, topped with gooey caramel and chocolate ganache.

You'll Need: Butter White Sugar Flour Light Brown Sugar Vanilla Cream Cheese Whipping Cream Golden Corn Syrup Dark Chocolate Condensed Milk Powdered Sugar

Step 1: Mix flour, sugar, butter and salt together until a dough forms. Push into cake pan.

Step 2: Bake at 350°C for 20 minutes or until golden brown.

Step 3: Whisk together the cream cheese, white sugar, powdered sugar and vanilla.

Step 4:  Whip the cream and fold into the cream cheese mixture. Pour into the pan and chill.

Step 5: Heat the light brown sugar, butter and golden corn syrup in a saucepan.

Step 6: Once boiling, add condensed milk and salt and then boil for 1 minute.

Step 7: Once cooled, spread the caramel on top of the chilling cheesecake.

Step 8: Heat the cream until scalding, then pour over the chocolate and stir to make ganache.

Step 9: Chill the cheesecake overnight, then remove from the pan and serve.
