Chocolate Mousse

The silkiest homemade chocolate mousse recipe with deep chocolate flavor.

Heat the cream and vanilla until scalding, then pour over the chopped chocolate.

Step 1

Stir together until smooth and melted into a glossy chocolate ganache. Set aside.

Step 2

Make a double boiler and whisk together the egg whites, sugar, and salt until dissolved and warm. (160°F / 71°C)

Step 3

Pour mixture into a stand mixer and whip - gradually increasing the speed until glossy firm peaks form.

Step 4

Gently fold the meringue into the cooled ganache in three stages until completely incorporated.

Step 5

Pour or pipe mousse into glasses, ramekins or dessert rings and chill for 4 hours.
