Tuxedo Triple Chocolate Mousse Cake

Homemade tuxedo cake with rich chocolate cake and dark and white chocolate mousse.

Make the chocolate cake by whisking the wet ingredients into the dry ingredients.

Step 1

Add hot water or coffee, then pour into cake pans and bake.

Step 2

Whip the egg yolks, sugar and cornstarch together until pale and thick.

Step 3

Heat half the cream with the vanilla in a pan until scalding, then slowly pour into the egg yolks.

Step 4

Pour the whole mixture back into the pan and bring to boil for 1-2 minutes.

Step 5

Divide the custard into two bowls and stir the dark chocolate into one and the white chocolate in the other until melted.

Step 6

Whip the reserved cream to firm peaks, then divide between the mousses and fold in gently.

Step 7

Slice the cooled chocolate cake in half and put one layer into the pan. Top with the dark chocolate mousse.

Step 8

Add the white chocolate mousse on top and smooth it out. Chill for 30 mins before adding the second cake layer.

Step 9

Chill the tuxedo cake for at least 4 hours, then decorate with chocolate ganache.
