Coconut Custard Pie

Silky egg custard pie with toasty coconut in a flaky pie crust

You'll Need: Eggs Egg Yolk Whole Milk Coconut Milk Shredded Coconut Sugar Vanilla Salt Pie Dough (recipe in the post)

Step 1: Make the pie dough according to the recipe, or buy a pre-made pie crust.  Line a pie dish and par-bake it. 

Step 2:  Whisk the eggs, egg yolk, and sugar together until combined.

Step 3: Heat the milk, coconut milk, and vanilla until scalding, then slowly whisk it into the egg mixture to temper the eggs.

Step 4:  Stir the shredded coconut into the custard mixture and let sit for 5-10 minutes.

Step 5:  Pour the custard filling into the baked pie crust and bake for 40-50 minutes.

Step 6:  Let the pie cool and then chill for at least 4 hours before slicing. Top with toasted coconut and whipped cream.
